Dandelion Lemon Pancakes



  • 1/2 cup dandelion petals
  • 1 lemon zested
  • 1/2 flour
  • 1/2 coconut flour
  • 2 teaspoons baking powder
  • 1 egg
  • 1 cup milk
  • 1 tbs coconut oil


  1. In a small bowl whisk together egg, milk and coconut oil until well combined. In a large bowl combine all dry ingredients and then add wet ingredients. Stir until well combined.
  2. Heat a lightly oiled frying pan over medium high heat. Pour batter onto pan and cook until little bubbles form on the outside, then flip and cook the other side for about 3 minutes.
